  • some fresh parsley

3 Cheese Omelette

To make the omelette, heat the pan and add the butter. Once the butter is melted the pan is hot enough to add the eggs that you have lightly beaten in a cup. Reduce heat slightly and allow the eggs to cook until almost all of the egg has become solid the whole way through. Add the three types of cheese by sprinkling it over one half of the egg, add salt and pepper for flavor. Just as the cheese is beginning to melt, take your spatula and fold the half of the omelette with no cheese over on top of the half that has the cheese. Gently press down on the folded omelette. Turn off heat and allow omelette to finish cooking or until the cheese has melted to your liking. Garnish with some fresh parsley and transfer to a warm plate and serve. To make the salad, you need to quarter the cherry tomato’s and place in a small bowl. Add the vinegar and coriander and salt to the tomato’s and allow to marinate. In a larger bowl add the lettuce/salad leaf, spring onion; cube the scooped out avocado and add to the bowl. Mix all together using your hands or a salad spoon. Once everything is roughly mixed, add the contents of the smaller bowl containing the cherry tomato’s back into the larger bowl. Drizzle the olive oil over the whole salad and serve or store in a container for later use.
